Thoughts From a Breastfeeding Momma

Let me start this post by saying FEED your babies. I don’t care how you choose to do it, just do it! The AAP puts out AWESOME guidelines you should follow those, NOT what your family did in the past. Standards for feeding have changed over the years, yes we are all alive but so were people who didn’t have seat belts in cars.

I wanted to make sure it was known that I am not anti-formula. I am however, pro-breastfeeding. Some might see these two as being the same but they really are not. There are a few reasons why I am pro-breastfeeding.

  1. It is what our bodies were intended for. This is why women have breasts we are mammals and mammals produce milk to feed their young.
  2. It is basically free. I was going to say free but I have taken supplements and teas at times to boost my production.
  3. It really is the best option for a baby. Despite what formula companies try to market this is what babies’ tummies are designed to digest.

I know not everyone can breastfeed easily. In fact, I have had challenges with both girls. Munchkin was lip tied (until she broke the frenulum on her top lip in a fall :) ) and Peanut battled some Jaundice early on. Both girls were difficult to feed. We all struggled but I sought help and was determined to continue. With Munchkin I was not in a place with many lactation consultants (in fact one was male… say what?!?!) so it wasn’t easy.

Lately there has been quite the drama with nursing on the social media circuit. A mother in Texas was harassed by Target Employees for nursing her child at the store. I am not sure why but people will actually suggest that a mother should feed the nursling in the bathroom. Would you eat in the bathroom at a public place? Exactly… why should a baby? BLEH!

I actually was part of a small group of moms who met at our local Target for a ‘nurse in’. No one said anything to us while we all fed our beautiful children. It was quite empowering to sit with a bunch of women all happily nursing! Rand McNally said please don’t do anything crazy!  HAHA He knows me all too well! There wasn’t any media coverage at our small store (though there was at other stores around the area and country!).

Facebook has been removing photos of moms nursing their babies’. Flagging them as inappropriate. Let’s be honest here. I am not one to put up a picture on Facebook. However,  there is NOTHING inappropriate about these photos as long as they are done tastefully. I have several friends with BEAUTIFUL photos of their little ones having a snack. I honestly think that I have seen pictures of girls in bikinis that show more breast than when people post a breastfeeding picture.

It isn’t gross, sexual, weird, strange, ________ (<<<insert your adjective here) to see breastfeeding. You don’t stare when someone breaks out a bottle right? So don’t stress breastfeeding. It is natural. There is NOTHING wrong with it.

I am really thankful that I was able to overcome all the challenges I was faced with early on while breastfeeding both girls. It wasn’t easy but I knew this is what I wanted to do… I nursed Munchkin for 14 1/2 months and still nursing Peanut 12 + months and going strong. I don’t have plans to wean her anytime soon (and she doesn’t seem to want to discuss it either!). She is my last baby and I am willing to nurse her for as long she wants!

Crunchy Baked Mozzarella Sticks!

Since graduating college I have spent every New Years Eve with Rand McNally. Okay, all but the one he spent working for Uncle Sam in a Desert. His family tradition for this night is a instead of a meal, they have lots of appetizers.  So we have adopted this tradition in our house as well.

As I have mentioned several times I am slightly addicted to ‘pinning’ new things to try on Pinterest.  I thought I found the perfect recipe while pinning one night for Mozzarella sticks, until I read the word ‘fried’. I don’t own a fryer and too many fried foods make us sick! So I continued the hunt for a baked recipe.

I came across a couple but wasn’t sold. I did use them for inspiration but changed it up… why not! The verdict.. they ROCKED!!!

Crunchy Baked Mozzarella Sticks

Ingredients

  • 12 egg roll wrappers cut in half
  • 12 string cheese sticks cut in half
  • water
  • 1 cup Italian Bread crumbs
  • 1 cup Panko Bread crumbs
  • 2 eggs beaten
  • 2 tsp extra-virgin olive oil (or olive Oil spray)

1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silpat type baking mat.

2. Cut the egg roll wrappers in half (My kitchen shears were perfect for this! ). Cut all the Mozzarella sticks in half. You can choose to skip this step but I will say they are pretty big even cut in half!

3. Place an egg roll wrapper  where it looks like a horizontal rectangle when you look at it. Place the Mozzarella stick in the middle. Fold in the ends and then roll to completely cover the stick. Use a little water to ‘seal’ the wrapper. Repeat for all the sticks.

4. Use a pastry brush or dunk the wrapped mozzarella stick in the egg wash. Then roll (use a spoon for better coverage) in the bread crumbs. Place on your prepared baking sheet.  Repeat this step for all of the sticks.

5. Lightly brush the tops of the sticks with the olive oil. I used my Pampered  Chef sprayer and this worked well!

6. Bake in the preheated oven for 10 minutes. Then place under broiler to finish.   Don’t walk away from the oven!!! Sticks are finished when the edges turn brown. Allow to cool for a few minutes before serving, unless you want to scold your guests and family :) .

Serve with a marinara, ranch, or Alfredo dipping sauce.

Christmas Bark!

So I have been so busy with Holiday stuff I have been neglecting the blog some… so I am so sorry! I am going to do my best to post a few over the next couple days. Most of them will be holiday ideas.

This recipe I found on …. you guessed it… PINTEREST! Seriously, I might go broke or save money with all my pins!

Anyway, I made this great Halloween Bark back in October and thought, why not try a Christmas one. It is so simple and even the Non-baker types can make this with NO issues!

Christmas Bark

32 Oz. Almond Bark Vanilla (2 Packages)
1 Box of Kellogg’s Crispix Cereal
4 cups Christmas shaped pretzels (or really any small ones will do!)
2 16oz. Bags of M&M’S (any variety will work-Peanut Butter Chocolate Candies, or Peanut Chocolate Candies, or Plain Chocolate Candies- I used Peanut  Butter and Pretzel) in Christmas Colors

Holiday Sprinkles **Optional

In a medium microwave safe bowl, melt chocolate in the microwave for 2-4 minutes at 30 second intervals until chocolate is melted. While it is melting you can mi In a large bowl, mix the cereal, pretzels, and M&Ms (you should steal an M&M or two to make sure they are good enough to serve!)

Pour melted chocolate over the cereal mixture. Using a large spatula to fold all together. Try not to mash the cereal too much while doing this.

Once all the mixture is coated completely with the chocolate, pour out onto a table lined with waxed paper (I used baking trays lined with wax paper and set it outside because it cooled REALLY fast!).

Shake some holiday sprinkles on them for extra color!

Once cooled, break up into pieces and store in an air tight container-Ziplocks work well!

Halloween Party 2011 Part 1

I decided to break this into two parts…  so be on the look out for the other part coming tomorrow.

We have a good group of parents that has formed a very loose ‘playgroup’. Mostly, we all just get together periodically and do things locally.  Tomorrow is our Halloween Party! It is going to be a great today Munchkin and I made some treats to take.

I had found a ton of great ideas on Pinterest… and settled on two fun snacks!

The first we found here.

Witches Hats!

Here is what you need:

  • 1 bag of Hershey’s Kisses (unwrapped)
  • 2 packages of Keebler’s Fudge Stripes cookies
  • a tube of Wilton Orange Icing/Vanilla Icing with Orange food coloring*
* If you use the vanilla icing then a piping bag and a small tip come in handy
How to make them:
Turn the cookies upside down.  Pipe a small circle of icing around the ring of the cookie. Push the Hershey’s Kiss  onto the cookie. Then allow the icing to harden. Cover the cookies and keep airtight until serving.
Munchkin had a BLAST putting the Kisses on the hats we made for the party!
Not too shabby for our first attempt. :)

Witches Hats

Our second treat was another Pinterest find from here .
Halloween White Chocolate Bark
14 whole Halloween Oreos, broken up
1 1/2 cups pretzels – any shape, broken into pieces
16 ounces white bakers chocolate/ white chocolate melts
1 cup candy corn
brown and orange colored sprinkles (any Halloween mix will do!)Cover a large cookie sheet with wax paper or parchment paper. Spread broken cookies, pretzels and about 3/4 cup of the candy corn onto the prepared cookie sheet in a 9×13 shape.

This is yummy even before the chocolate!

Place almond bark in a container and microwave for 1 1/2 minutes. Stir and then microwave for another 30 seconds until melted and smooth.Drizzle the melted chocolate over the cookie mixture, spreading with spatula if needed to coat evenly. It may seem like it’s not enough but just try to evenly spread it.

White Chocolate Covered

The ratio of chocolate to toppings will be off if you add more almond bark/white chocolate. Sprinkle remaining candy corn and colored sprinkles over the almond bark/white chocolate while it is still wet.

Ready too harden!

 Place cookie tray into refrigerator until set and firm. Remove and gently break bark into small pieces – it’s really rich. Makes around 20-24 pieces. Store in air tight container.
I’ll take a picture tomorrow of the final product! I will also post some of the crafts we end up doing too. Fall is such a fun time! :) Enjoy!!!
